I recently got back from the annual United States Personal Chef Association Conference, which was held in San Antonio, TX, this year. The camaraderie and classes were awesome, but of course as a chef, the FOOD was what stuck with me the most! Pictured here: some delicious Mexican corn from La Gloria, coated with crema, chile powder, and cojita cheese. I made a similar version last weekend, by first grilling an ear of corn, then lightly coating it in a layer of mayonnaise, and finishing it with a dusting of chile and parmesan cheese. On the right is a picture of a quick lunch I grabbed at the Pearl Brewery Farmers Market: fresh corn tortillas, braised pork, avocado crema, and pickled red onion. Yum. Inspired by my Tex-Mex meals in San Antonio, I picked up a cookbook in the Alamo gift shop: "The Homesick Texan" by Lisa Fain. So far, the Tex-Mex Squash Casserole and Avocado Soup have been big hits... don't be surprised if I sneak these onto my menus in the near future!
