nutty carrot pilaf

Bursting with healthful almonds and pumpkin seeds, this pilaf is an awesome side dish to any meal. The carrots lend it a bit of sweetness, and the parsley adds a fresh grassy flavor. Get a good dose of zinc, manganese, magnesium, phosphorus, vitamin E, and biotin from this crunchy and flavorful dish - use brown or wild rice for added nutrition.
