Bee Balm honey: soothing and delicious

The smell from this pot of bee balm honey, gently warming on the stove, is heavenly!

Monarda Fistulosa (also called Wild Bergamot or Bee Balm) is - you guessed it - a wildflower! The oregano-like flavor of this plant, in the mint family, is delicious, plus it has medicinal qualities. Sounds weird at first, but give it a try and you'll be a believer!

You may steep your bee balm in honey by simply pouring honey over the fresh (clean) flowers and leaves in a jar and letting the honey infuse for a few weeks, or you may do as I did here, and speed along the process by gently warming the mixture for an hour or so, then straining out the plant parts and storing the honey in a clean jar.

Whether you choose to enjoy your Bee Balm Honey simply as a delicious addition to your tea, or for it's medicinal purposes, this is an awesome pantry item to have on hand. To learn a bit more about it's uses in herbal medicine, check out this site.
